Potato  and onion flakes means the powder from a  dehydrated potato  and onion respecting. In making this flakes it  is  first dehydrated and packed. Potato is the most important vegetable throughout the world. The  area  under potato in India has been estimated  at  50  2150 hectors in 1984-85. The principal potato producing areas are  U.P Bihar,  Orissa and U.P. up -to -date in punjab  and  Maharashtra, Darjeeling-red-round  in  West Bengal , orissa, and  Great  scot, Late  carmen and Royal Kindney in south India. In other parts  of the country satha and Gola are most popular. Onion  is  one of the most widely grown  vegetable  crop  of India and in Valued as a vegetable and spice. The important onion growing states are A.P, Maharashtra, Tamil Nadu, Karnataka,  West Bengal,  M.P,  and Gujrat. Onion are made into pickels  and  also dehydrated. Due  to green - revolution effect and various researches  in agricultural field many new varieties of potato has come up,  and the  production  of  potato  has reached to  such  a  stage  that marketing  crisis  or raw potato has become now- a  days  natural phenomena in some parts of our country every alternate year.  Due to  this critical reasons, formers get loss and discouraged  that is  way potato in some other processed and finished  form,  which may  last  a long period and may be marketed  easily,  is  needed potato  powder  serves the same purpose fully. In  the  field  of research   and  development  of  new  varieties  of  potato   and pesticides,  central  potato Research Institute,  new  Delhi  and central food Technological Research Institute, Mysore (Karnataka) have done commendable work.
